Although I don’t travel often, I do LOVE it!  I love learning and experiencing new cultures via people, food, history and architecture.  I love traveling to places where I can do EVERYTHING or NOTHING and still have an incredible experience just by being present!  I get do all of this with my family and loved ones so we can create awesome memories.  This month, I’ve given you a peek into my life by sharing more about myself and my reasons for blogging.  Now, I’ll share my travel wish list!  Come travel with me!

Here are 5 places around the world that I would love to visit:

1.  “Door of No Return” – Goree Island, Senegal, Africa

You know I love genealogy.  So I have to go back to Africa!  I must visit the land of my ancestors.  A DNA test results will hopefully narrow down the African country and ethnic group of my ancestors.  I would love to visit that specific region.  Until then, I would like to visit the “Door of No Return” on Goree Island.  This was the door that many slaves passed through to go to the slave boats before they traveled the horrific Middle Passage.  I would like to pay homage to my ancestors.

2.  Rome. Vatican City, Naples – Italy

Sometimes I can’t wait to do my DNA testing because I’m so sure that somewhere in my lineage there is a trace of Italian ancestry! LOL  I love Italian history, architecture and FOOD!!!  I would love to visit the ruins at the Colosseum in Rome, the Sistine Chapel in Vatican City and Pompeii in Naples.  But you know I will be eating ALL of the authentic pizza and Italian food I can from every region.  I LOVE Italian food!  Here’s a blog post from Vermilion Roots featuring a video from their trip to different cities in Italy.  They also feature an authentic Italian thin crust pizza recipe.

3.  Taj Mahal – Agra, India

Let’s go back to that DNA test!  I think there might be some traces of Indian ancestry (not Native American, I probably have traces of that too! :-) )  At college, I was blessed to make great friendships with people from India.  When I entered corporate america, I made some more friendships.  I learned a great deal about their culture, religion AND FOOD.  Again, the FOOD is delicious!!!  Now, I’m not a hot and spicy food loving girl.  That’s my hubby!  LOL  But I LOVE the flavors.  Visiting one of the Seven Wonders of the World, The Taj Mahal,  would help me enjoy the best that India has to offer.  I will experience their culture, religion and FOOD.

4.  Bora Bora Island – Leeward group of the Society Islands, French Polynesia

Now this would be a romantic vacation! LOL  Hubby and me ALONE; no kids!  LOL I remember the first time my husband sent me a pic of the huts in Bora Bora seemingly floating on the clearest bluest water I’ve ever seen.  I was hooked!  Now this is amazing, because I can’t swim.  So why would a girl who can’t swim WANT to vacay in a hut over the ocean?  Because I love being near the water!  LOL  It is so calming and therapeutic.  It’s also a spiritual moment for me too.  I can meditate and let the water wash all the negative energy away.  Maybe we can visit on our 25th anniversary?  We’ll see!

5.  Bethlehem, Jordan River, Church of the Holy Sepulchre  – Israel

My faith is very important to me.  I share it in every blog post and Periscope video.  It is who I am.  So I must go and visit the land where my Savior was born, died and rose again!  I would love to visit Bethlehem where Jesus was born.  I want to reflect at the Jordan River where Joshua led the children of Israel into the Promised Land.  I want to visit the the Church of the Holy Sepulchre to see Calvary(Golgotha), the place where Jesus was crucified.  This would be a family trip so we all could experience spiritual moment!

What places are on your travel wish list?

Here’s my food journal from 11/16.  I exceeded my total fat goals because I ate the cashews.  I didn’t realize they had 14 g of fat per serving (1/4 cup size).  I’ve been creative with my meals this week.  I made Crock Pot Chicken Drumsticks and Creamy Greek Yogurt Macaroni and cheese.  I followed the chicken recipe, but added no salt and substituted yellow mustard for dry mustard(I didn’t have any on hand).  The chicken was very tender and yummy.  Now I was surprised about the macaroni and cheese.  I can make some good baked macaroni and cheese!  LOL  But I wanted to try a healthier version since I was craving it.  It was VERY creamy.  I didn’t add spinach and I used regular pasta.  I didn’t want to change too much that I couldn’t enjoy the basic macaroni and cheese dish.  The Greek Yogurt gives it a tang like sour cream.  But it was delicious.  My kids loved it!!!  I’ll definitely add this to the rotation.

I did 3 rounds of the following exercises:  Burpee/Curl/Press (10 reps modified), Single Leg Deadlift Row (10 ea leg), Pushups (modified 20 reps), Side Planks (1 min ea side modified).  I used a step stool and was able to do 2 rounds of squats with weights and 2 rounds of crossovers (10 reps with weights) of the Squats & Crossovers routine.  I did less reps this time because I have been coughing lately.  I’ll build my stamina and strength to increase my reps!
